Description
A whole brisket runs eighty dollars or more this fall, and half of it never reaches the plate. Memphis was never a brisket town anyway. These are the five cheap cuts an old pit man outside Memphis smokes instead, each with a pit method and an oven version for the cold months.
In this video: bone-in chicken legs, the pork loin roast that slices like a brisket flat, country-style ribs (and why they're not ribs at all), whole spare ribs with the rib tips the store keeps for itself, and the number one cut that puts more meat on the table than the brisket for forty percent of the money.
Temperatures: chicken is safe at 165°F (best at 175-185°F for dark meat). Pork and beef whole cuts are safe at 145°F with a 3-minute rest. 195-205°F for shoulder and ribs is for tenderness, not safety. Charcoal stays outdoors, always.
