Description
Why do pork chops so often come out dry, gray, and tough?
Maybe the problem isn't the pork.
Maybe you're frying it too long.
This old-fashioned Appalachian-style method uses a completely different approach: start with a thick pork chop, salt it ahead of time, dry the surface, and sear it hard in a hot skillet.
Then comes the part most modern frying recipes leave out.
Take the pork out.
Build a bed of onions in the same skillet. Bring the browned bits back into the sauce. Return the pork to the pan, cover it, and finish it gently over low heat.
**High heat for flavor. Low, covered heat for tenderness.**
The skillet creates the crust.
The onions help create a moist cooking environment.
The browned bits become part of the sauce.
And the lid changes everything.
It's not really about learning another pork chop recipe.
It's about understanding when to stop frying.
For food safety, use an instant-read thermometer and follow current USDA guidance for pork.
Save this old-fashioned pork chop method for the next time you're cooking thick pork chops.
