Description

A whole cake is the dessert nobody bakes once they live alone. A 9x13 pan is fifteen slices, and by slice six it's going in the trash. These 10 loaf pan desserts make eight slices instead. Keep two for this week and freeze the other six one slice at a time. When you want dessert, take out one slice and let it thaw on the counter in about 20 minutes. No big cake, no waste. In this video: 1. Old-Fashioned Pound Cake 2. Banana Bread (plus the freezer trick for black bananas) 3. Lemon Loaf with Glaze 4. Chocolate Icebox Cake (no baking) 5. Small Cheesecake 6. Cherry Dump Cake (3 ingredients, no stirring) 7. Fudgy Brownie Loaf 8. Old-Fashioned Gingerbread 9. Pineapple Upside-Down Loaf 10. Sour Cream Coffee Cake The one trick that makes all ten work: line the pan with a strip of baking paper that hangs over both long sides like handles. Grease the pan and the paper, and the cake lifts out in one piece. No flipping, no scraping, nothing stuck to the bottom. The freezer method: lay the slices on a plate, not touching, and freeze for an hour. Then drop them into a bag. You can take out exactly one slice whenever you like. Tip: numbers 6 and 9 share one box of yellow cake mix. Half goes into the dump cake, and the other half becomes the pineapple upside-down loaf. Every recipe includes substitute tips, so you can make it with what's already in your kitchen.
