NEVER Boil Your Rice Plain Again — Try This Old Indian Trick My Mother Swears By
Matar pulao — basmati rice cooked with green peas, whole spices, and ghee — comes together in about twenty minutes and needs nothing poured over it to taste good. The video walks through a specific method developed to fix the most common problems with plain rice: washing the grains four or five times until the water runs nearly clear removes the loose starch that causes sticking, and a fifteen-minute soak lets each grain absorb water evenly so it grows long rather than breaking apart. Whole spices like cumin seeds, cloves, cinnamon, and cardamom go into melted ghee rather than cooking water, because their flavor lives in oils that only release into fat. After twelve minutes on the lowest flame, the heat goes off and the pot stays closed for five more minutes — a technique called dum — so trapped steam evens out every grain before the lid comes off.
Wash the rice until the water is nearly clear, then soak it for fifteen minutes before cooking, because both steps prevent the sticking and breaking that make plain rice taste flat. Toast whole spices in ghee for thirty seconds to one minute, watching carefully since burnt cumin turns bitter and cannot be rescued.
