Description

Everything in this video, written down — www.lacucinavera.com A noodle that looks too smooth to touch will feel too soft to bite. Dry pasta is made one of two ways, and the way decides everything after. Pushed through a bronze die the dough comes out rough, almost matte. Pushed through a Teflon die it comes out smooth, fast and cheap. That roughness is surface area, and sauce grips a rough noodle the way paint grips a rough wall. Then there is the drying: slow and cool keeps the bite, hot and fast does not. Neither number is printed on the front of any box. The short of it: touch the dry noodle before you trust it. Rough means it was made with respect, smooth means it was made for speed. A smooth noodle cannot be saved but it can be rescued — pull it a minute early and finish it in the pan with a ladle of the starchy water. And choose by the die, not by the flag on the box. Tell me in the comments whether the pasta in your pantry was rough or smooth in your own hand, and tell me your county and where your family came from. I read every one. Next time: what the can does not want you to notice about the colour of a truly ripe tomato. La Cucina Vera — the whole method written down, 79 pages, nineteen dollars, thirty days to change your mind. www.lacucinavera.com
