Description

You don't need a pressure canner or a shelf full of equipment to put peppers away for the winter. The jars that go cloudy and soft by February usually fail for one reason, and it is not your hands. In this video, I'm breaking down 7 things about putting peppers up the way an Italian kitchen did it — in vinegar, with the oil kept for the plate. I'll show you which peppers I pick up and which ones I leave in the crate, the one step almost every video skips, and the mistake my own mother made her entire life. A bushel at the right stand in October still runs eight or nine dollars. The same peppers in a pretty jar in February are four dollars for one cup. Number three is the one that frightens me. Number one happens before you have touched a single pepper. If you have ever thrown out a jar you worked all afternoon on, start here. #canning #pickling #homecanning #foodpreservation #pepper #italiancooking #pantrystaples #winterprep #oldways #kitchentips
