Description

There's a pot of beans boiling hard on a stove somewhere right now. Half of them have split, the other half are still hard in the middle, and it isn't your fault. The back of the bag said bring to a boil. For nineteen years I ate at a logging camp cookhouse where the cook never boiled a bean in his life. Every Saturday night he buried the pot in a hole full of coals and went to bed. In this video: - why old beans never soften - the overnight soak - salt in the soak (it's not what you were told) - the pot, the meat and the molasses - how much water - the bean hole, and how your oven does the same job Red kidney beans must boil hard for 10 minutes before slow cooking. If you're watching salt or sugar, use a smoked turkey wing and cut the molasses. Molasses or brown sugar? Salt pork or ham hock? Did anybody in your family ever dig a bean hole? Tell me where in the comments, and give me their name. Eat it hot, friend. It keeps you.
