Description
Sakkarai Pongal Recipe - Soft, Glossy, Temple-Style (With Amma's 2 Secret Ingredients) Soft, glossy, temple-style Sweet Pongal — Sakkarai Pongal, Chakkara Pongal, made exactly the way Amma's made it for decades, including two secret ingredients she's never shown on camera before.
This video covers everything: the exact rice-dal-jaggery ratio, how to roast moong dal correctly, why jaggery should never go directly into the cooker, the straining technique that keeps the syrup smooth, and Amma's two secret additions that genuinely change the final flavor.
WHY THIS PONGAL IS DIFFERENT:
Most homemade Sweet Pongal either turns out too dry, too watery, or loses that authentic temple aroma. This recipe walks through every step that actually matters, with Amma's exact technique.
INGREDIENTS:
Raw Sona Masoori rice — 1 cup (200g)
Yellow moong dal — 1 cup (200g)
Powdered jaggery — 2 cups (300g)
Water (for cooking rice & dal) — 5 cups (1200ml)
Water (for jaggery syrup) — 1/4 cup (60ml)
Pure desi ghee — 1 cup, divided
Cashews — a handful
Almonds, sliced — a handful
Pistachios, chopped — a handful
Dry grated coconut — 1/4 cup (25g)
Edible camphor (pacha karpuram) — a small piece, use sparingly
Sea salt — a pinch
METHOD OVERVIEW:
Dry roast moong dal until golden and aromatic, then pressure cook with soaked rice at a 2 cups grain : 5 cups water ratio. Separately melt and strain jaggery into a smooth syrup. Mash the hot rice and dal with ghee immediately after cooking, mix in the jaggery syrup, then finish with edible camphor, a pinch of salt, and a crisp ghee-roasted nut tempering.
TIPS:
- Jaggery goes in after cooking, never with the rice — sugar slows down how grains soften
- Always strain your jaggery syrup to remove natural impurities
- Mash while hot for that authentic gooey texture
- Use only food-grade edible camphor, never pooja camphor
- A pinch of salt genuinely sharpens the sweetness
