Mija, come here. Close the door, because this one is about your mornings. It is seven fifteen, nobody has eaten, and you are handing five dollars through a window again. And maybe you tried the freezer batch once, and they came back soggy with eggs like rubber. It was never you. A freezer burrito dies of exactly one thing, and it is WATER. Here are seven tricks, the dry line that keeps them from going soggy, and the reheat that brings the crust back. Forty-five minutes on a Sunday makes twenty.
⭐ THE BATCH (makes 20)
• 20 flour tortillas, 8 to 10 inch, warmed until soft
• 18 eggs, beaten with 1 teaspoon salt
• 1 lb Mexican chorizo (the raw, loose kind)
• 3 cups THICK refried beans (thick enough to hold a line)
• 1 lb shredded Chihuahua, Oaxaca, or Monterey Jack
• Parchment paper, freezer bags, a marker
• Salsa for the table. Never inside.
⭐ THE 7 TRICKS
1. THE DIAGNOSIS: THE ENEMY IS WATER. Steam trapped in the tortilla turns to ice, and the ice melts into the bottom. Everything COOLS on a tray for 15 minutes before it touches a tortilla.
2. NO POTATOES, NO SALSA INSIDE. Page 244, the freezer map: potato does not freeze, it comes back grainy and mealy. Page 283: salsa on the side, never inside, because inside makes them weep.
3. PULL THE EGGS EARLY. They get cooked twice. Fold them over low heat into soft, shiny curds and take them off a little underdone. Fry the chorizo until the fat renders and the edges crisp (page 157), then DRAIN it.
4. THE DRY LINE. The driest thing goes down first. A band of thick beans across the lower third, two fingers bare at each side, then a line of cheese on top of the beans. Eggs and chorizo sit on top of that wall and never touch the tortilla. Keep it SLENDER (page 282): a wide line of filling, not a mountain.
5. THE LOCK AND THE WELD. Fold the two sides in first, roll from the bottom, snug, seam down. Then seam down on a medium hot dry comal, 1 to 2 minutes per side, until lightly blistered and gold (page 283). It goes into the cold with a crust, not a damp skin.
6. FREEZE FAST, WRAP, AND LABEL. Cool burritos in a single layer on a tray, not touching, for 2 hours. Then a square of parchment around each one, packed tight in a freezer bag with the air pressed out. Write what it is and the date. Safe for 3 months, at their best in the first month.
7. THE REHEAT. Take off the parchment, wrap in a dry paper towel, microwave 1 minute, turn it, 30 to 60 seconds more. Then a hot dry comal, 1 minute per side, to bring the crust back. No microwave: thaw overnight in the refrigerator and use only the comal. Salsa goes on now.
THE HONEST WORDS (because I will not oversell you):
• Soggy bottom → something went in hot, or something wet touched the tortilla.
• Rubber eggs → you cooked them all the way on Sunday.
• Cold in the middle → it was too fat. Roll them slender.
• Split open → the tortilla was cold when you rolled it.
• It will never be quite as good as one rolled fresh. It will be far better than the window, and ready in three minutes.
• A correction to my own book: page 283 says never the microwave. That line is about a fresh burrito. A burrito frozen hard may use the microwave for ONE job, thawing.
WHO PROFITS: the batch is about $25 at my store, a little over a dollar a burrito, call it two if your store is expensive. The window charges $4 to $6. One person, five mornings a week, is more than a thousand dollars a year. There are mornings the window is exactly right. But they are not selling you a burrito. They are selling you seven fifteen in the morning.
THE HABIT: one Sunday a month, and change the filling each time. Chorizo and egg. Machaca and egg, the original burrito of the north (page 264). Roasted poblano strips and cheese. Plain bean and cheese for the children. The dry line never changes.
And the chorizo pan with the orange fat baked on? That is the other half of my life: 🧼 Clean The Mexican Way → [link to cleaning channel]
Give it one Sunday. If you only change two things: let everything COOL before you roll, and keep the salsa outside. Then tell me in the comments what your first one tasted like on a Tuesday. Tell me the truth: were you putting potatoes in the freezer? Tell me what the window near you charges this week. And tell me your county.
