Mija, take the lid off last night's rice. If it is a hard brick, and the microwave only made it rubbery outside and cold inside, the rice is not ruined. It is cold and dried out. Here are seven tricks, one of them keeps your family from getting sick, and the last one makes yesterday's rice taste better than it did fresh.
⭐ THE 7 TRICKS
1. NOT STALE, THIRSTY: the starch tightens and pushes its water out, fastest at fridge cold. The cure is water + heat + a cover.
2. OFF THE STOVE WITHIN THE HOUR (page 84). Rice left warm for hours can make you sick, and reheating does not fix it. Sat out all night? Throw it away.
3. NEVER PUT IT AWAY IN THE POT. Shallow container, two fingers deep, lid on once the steam stops. About 4 days in the fridge.
4. THE MICROWAVE, THE RIGHT WAY (page 85): break it up, spread it FLAT, 1 spoon of water per plate, COVER it. 1 minute, stir, 1 minute more, steaming hot all through. Rest 1 minute covered.
5. THE PAN: rice in a pan, 2 to 3 spoons of CALDO (chicken broth) instead of water, lid on, low fire, 4 to 5 minutes. Fluff with a fork, never a spoon.
6. FREEZE IT FLAT: a cup or two in a zip bag, pressed flat, air out. About a month. Straight from frozen into the pan or onto the plate. And reheat rice ONCE.
7. Watch for the sound my father followed into the kitchen. It is his breakfast, and it only works with cold rice.
⭐ THREE MORE DOORS FOR YESTERDAY'S RICE (page 84)
Into hot caldo de pollo for the last few minutes · into a bowl of beans with their broth · white rice warmed with milk, canela and sugar.
THE HONEST WORDS:
• Dry → more water, or you forgot the cover.
• Mushy → too much water. The spoon, not the cup.
• Hot outside, cold inside → it was in a mountain. Spread it flat.
• Sour, slimy, or you cannot remember the day → throw it away.
WHO PROFITS: a cup of ready-cooked rice is about $2. A two pound bag costs about the same and makes more than a dozen cups. Cool it fast, seal it flat, add water, cover it. That is all they know.
THE HABIT: cook double on purpose. Before anybody sits down, half goes into a shallow dish and into the fridge or flat into the freezer.
And the pot with the ring of rice dried on like cement? That is the other half of my life: 🧼 Clean The Mexican Way → [link to cleaning channel]
If your leftover rice always came out hard and sad, it was never because you were careless. Nobody ever showed you. Tell me in the comments: what did your mother make with yesterday's rice? I read every one.
