Description

kitchen written down (372 pages): https://berthascookbook.com Mija, fold a tortilla from your refrigerator in half. If it cracked, or if the microwave turned it to rubber and then to a paper plate, the tortilla was never the problem. It is only cold and thirsty. Here are seven tricks, and the last one makes a tortilla from the bag taste like it came off the comal this morning. ⭐ THE 7 TRICKS 1. NEVER eat a tortilla straight from the bag, not even a fresh one. The last step was always yours. (As a tortilla cools, the starch tightens and squeezes the water out. Water + heat undo it.) 2. CORN and FLOUR are not reheated the same. Flour has fat: dry comal, a few seconds a side, no water. Corn has no fat: water first, then heat. 3. THE WET HAND (page 114): hot dry comal, no oil. Sprinkle the corn tortilla with a wet hand, 30 seconds a side. Older ones: one second under the tap, straight onto the comal. 4. THE MICROWAVE, honestly: naked on a plate = rubber, then cardboard. Wrapped in a BARELY damp towel, 30 seconds, works but eat them right away (page 114). For a crowd: damp towel in a colander over simmering water, lid on, 1 minute. 5. THE TOWEL IS PART OF THE RECIPE (page 116). Every tortilla goes straight into a folded clean kitchen towel. Never a naked plate. 6. FRIDGE VS FREEZER: the fridge stops mold but it is where tortillas stiffen fastest. Eating them in 2 to 3 days? Fridge is fine. Longer? Freezer: cool completely, wax paper between each, flat in a zip bag, straight from frozen onto the comal 30 to 40 seconds a side (page 114). 7. MAKE IT PUFF: the three flips (page 112). Sprinkle, 15 seconds, flip, about 30 seconds until freckled, flip again, press the middle with a folded towel. Gas stove: a few seconds right on the flame with tongs. THE HONEST WORDS: • Cracked after warming → needed more water. Dip instead of sprinkle. • Crispy → comal too low, sat too long, or no water. • Gummy → water on a flour tortilla. • Snaps like a cracker → no water saves it. Chilaquiles bag (page 114). WHO PROFITS: a bag of 30 corn tortillas is about $2, and half of it gets thrown away stiff. Then come the plug-in warmer and the "stays soft longer" pack. A splash of water and a hot pan were always enough. THE HABIT: the comal lives on the back burner, and one clean towel lives in the drawer just for tortillas. And the comal after, with the burnt spots of corn and the stuck cheese? That is the other half of my life: 🧼 Clean The Mexican Way → [link to cleaning channel] If your tortillas always came out stiff, it was never because you were careless. Nobody ever showed you. Tell me the truth in the comments: comal house or microwave house? I read every one.
