📖 Get La Cocina de Bertha, every recipe in this kitchen written down (372 pages): https://berthascookbook.com Mija, look at this cardboard box with me. Five dollars for one quesadilla, the cheese a slab by the time you get home. A quesadilla is a race between the tortilla browning and the cheese melting, and on a high fire the tortilla wins every time. Here is the whole drive-thru quesadilla at home for under two dollars, and at the end, the creamy jalapeño sauce. ⭐ WHAT YOU NEED (makes 10) • 10 flour tortillas (or corn, my mother's way) • 1 lb melting cheese in a BLOCK: Oaxaca, Chihuahua, or Monterey Jack, grated yourself (never the pre-shredded bag, page 269) • 2 lb boneless chicken thighs, salt, cumin, garlic powder, a pinch of chile powder • or any leftover guisado: tinga, caldo chicken, rajas (page 182) ⭐ THE METHOD 1. Season the thighs, sear in a hot pan with a spoon of oil about 5 minutes a side. Rest 5 minutes, chop SMALL. 2. Comal or heavy pan on MEDIUM, dry. Never high. (Page 182 says medium-low and turn every minute, page 269 says medium and 2 minutes a side. Both work.) 3. Warm the tortilla 20 seconds, flip. 4. THE GLUE: cheese on one half, then chicken, then more cheese on top. Fold, press gently. 5. 2 minutes, flip once, 2 minutes more, until golden and freckled. The cheese lace that fries on the comal is the cook's tax. 6. REST 1 minute before cutting (page 269), then cut into 3 triangles. Butter on the comal or dry? Both are correct (page 270). ⭐ THE CREAMY JALAPEÑO SAUCE • 1/2 cup mayonnaise + 1/4 cup crema or sour cream • 2 tbsp pickled jalapeños, chopped very fine, + 2 tbsp of the jar's vinegar • 1/2 tsp cumin, 1/2 tsp paprika, 1/4 tsp garlic powder, a tiny pinch of sugar, a pinch of cayenne Stir, chill 30 minutes. A thin layer inside, a little cup on the side. Keeps a week. THE HONEST WORDS: • Burnt outside, cold middle → the fire was too high. Always. • Grainy, oily cheese → it came from the bag. • Fell apart when flipped → no cheese on top of the chicken, no glue. • Soggy → wet salsa inside. Salsa goes on the side. WHO PROFITS: one drive-thru chicken quesadilla is about $5 near me. Ten flour tortillas, a block of cheese, two pounds of chicken thighs, and a jar of pickled jalapeños are about $18 at my store. Ten quesadillas, under $2 each. THE HABIT: cook and chop the chicken on Sunday, keep it next to the grated cheese. A quesadilla is four minutes away all week. And the comal with the burnt cheese lace stuck to it? That is the other half of my life: 🧼 Clean The Mexican Way → [link to cleaning channel] If your quesadillas always came out burnt outside and cold inside, it was never because you were careless. Nobody ever showed you. Tell me in the comments: corn house or flour house? I read every one.
