Your ginger goes soft and mouldy in under two weeks, and the fridge is usually the reason why.
Ginger is a tropical root, and standard fridge temperatures of 35 to 40 degrees cause slow cellular damage most people have never heard of. That's why it looks fine outside and turns soft in the middle.
In this video I count down 13 things about storing ginger, from why thick-skinned mature ginger lasts longer than young spring ginger, to the paper towel method that buys you three to four weeks, freezing, wine and oil submersion, pickling, drying, and even planting a piece in a pot so it keeps growing.
The one I keep coming back to is the old Chinese method: bury unwashed mature ginger in slightly damp sand, somewhere cool and dark around 55 to 60 degrees. No fridge involved at all, and it stays firm and usable for about six months.
I also explain why aged ginger, true lao jiang, actually tastes deeper and warmer after those months, and why turmeric responds to the same method while garlic does not.
If you cook with ginger often and keep throwing half of it away, start with the sand.
