Description

They went into the oil looking perfect and came out split down the side, the filling gone, the pan full of burnt meat and the shells hollow and greasy. Or they fell apart in your hands before they ever reached the pot. There are two moves that fix it, and the first one will sound like nothing: the wheat is SOAKED, never boiled. Boiled wheat is waterlogged, and water inside a shell turns to steam in hot oil and blows it open. The second: the filling goes in cold and dry, and the seam gets closed with wet hands. I'm Rosa. I cooked for twenty-four years in a Dominican kitchen in Washington Heights, and for years mine split too, and I blamed the wheat, the oil and the pan — everything except the pot I had boiled it in. The method, so you can keep it (makes about 20): THE SHELL • 2 cups fine bulgur wheat (trigo #1 — the fine grind, not coarse) • Cover with cold water and soak 30 to 40 minutes, until a grain crushes between your fingers. DO NOT BOIL IT. • Drain, then squeeze it BONE DRY in a cloth or fine strainer. Press hard. • Work in ½ small onion grated to a pulp, 1 tsp salt, ½ tsp black pepper, 1 tsp dried mint if your house uses it, a little oregano • Knead 3 to 4 minutes until it holds like a dough. If it won't hold, it is still too wet — squeeze again. THE FILLING • 1 lb ground beef browned with 2 tbsp sofrito, ½ onion chopped fine, 1 tsp oregano, salt, pepper, a little tomato paste • Cook it until DRY, then CHILL IT COMPLETELY. Overnight is best. SHAPING • Wet hands. A ball the size of a small egg, bore a well with a wet finger while turning, walls about ¼ inch • A spoonful of cold filling, close it, seal the seam with wet fingers, roll into a torpedo with a point at each end. Smooth every crack. FRYING • 350°F, pot no more than half full, 4 or 5 at a time. Lower them in with a spoon. • Don't move them for the first minute. 3 to 4 minutes total, until deep brown. Rack, not paper. FREEZING • Freeze shaped raw quipes on a tray, then bag. Fry from frozen, about a minute longer. Careful: a quipe that splits sprays hot fat. Never crowd the pot and never poke them.
