Description

You bought the good piece — skin on, a thick white band of fat under it — you fried it, it looked right, and then the skin bent instead of breaking and you chewed, and chewed. It was not bad pork and it was not you. It was water. Skin does not simply crisp: it has to blister, and that is a two-stage job. There is water locked inside belly skin, and it has to leave slowly at a low heat before any high heat arrives. Then the flame comes up and the skin puffs in two or three minutes. One temperature the whole way gives you greasy pale pork, or a dark outside sitting over raw white fat. I'm Rosa. I cooked for twenty-four years in a Dominican kitchen in Washington Heights. And before anybody types it: I made chicharrón de pollo already. Same word, different food. That one is chicken cut small in a thin crackly coat. This is pork belly, where the skin itself is the point. The method, so you can keep it (serves 6 to 8): • 4 lbs pork belly, skin on, in roughly 2-inch cubes. Skinless belly can never crackle. • Night before: score the skin a finger-width apart, through the skin and just into the fat, never into the meat. Rub with 2 tbsp salt, the juice of 2 limes or sour oranges, 6 cloves crushed garlic, 1 tbsp oregano. Leave it UNCOVERED in the refrigerator overnight, skin side up. Two hours is the minimum. • Pat it bone dry before it goes near the pot. • Stage one — water: cubes into a cold heavy pot, water halfway up, lid on, medium. 30–40 min, until the water is gone and the pork sits in its own rendered fat. • Stage two — low: lid off, a lazy bubble in that fat, 20–25 min, turning. Meat goes golden, skin goes dry and hard but stays pale. It has not puffed yet. That is correct. • Stage three — up: raise the heat, 2–3 min. The skin blisters and turns amber, and the sound changes from a slow heavy bubble to fast dry snapping. That is done. • Salt it the second it comes out, on a rack, and put nothing over it. Hot fat and water do not mix. The water goes in cold, at the start, and that is the only time. Never add water to hot fat — not from a wet spoon, not from a lid with condensation on it. Keep the pot no more than a third full, keep a lid on the counter, and stand back for the last few minutes. Same-day food. Leftovers uncovered in the refrigerator, back in a hot oven on a rack — never the microwave.
