Description

There's a brown stoneware crock with a lid in the back of a cabinet in almost every house I clear. You've got one. You keep string in it, or it's on a shelf because it looks old. It's a bean pot — and there was a time when it went in the oven at bedtime in every farmhouse in this county, and came out at breakfast. Almost every pot of beans made tonight will be made wrong the same way the bag says to make it: a hard boil, two hours of watching, half the beans burst to mush, the other half hard in the middle, in gray cloudy water. My mother made beans every week from first frost on, and I don't remember a burst bean in that house. She never boiled one on top of the stove. I'm Otis. Forty years of barns and estate auctions across the Midwest, and the kitchen is the last room I clear. In this one: why OLD beans won't soften no matter what you do, and how to buy ones that will — the pinch of baking soda for hard well water — why you don't actually have to soak — SALT AT THE START, and why the "salt makes beans tough" rule is exactly backwards (it's acid, not salt) — the ham BONE, not the cubes — why a rolling boil is what splits the skins — the cup of beans mashed against the pot that thickens the broth with no flour — and the eighth piece, the one thing she did with that crock that I have never once seen in a modern kitchen. The lid on, into the oven, and walk away. That's the farm trick. Safety, said plainly in the video: bring the pot to a full boil for ten minutes on the stove BEFORE any slow oven or slow cooker time — especially red kidney beans. That's not cooking, that's safety, every time. Did your mother cook beans on the stove or in the oven — and did she salt at the start or the end? And what went with them? Tell me, and tell me her name. I read every one
