Description

Pumpkin Hardtack inspired by 19th-century survival rations — I recreated this old-fashioned emergency biscuit at home using pumpkin, flour, milk powder, and simple pantry ingredients. Dense, dry, inexpensive, and designed around one important principle: moisture control. This is my modern take on traditional hardtack, the famously hard, dry biscuit associated with soldiers, sailors, and long journeys before modern refrigeration. Instead of making the classic flour-and-water version, I add pumpkin and milk powder to create a richer survival biscuit while testing how dry the finished ration can become. In this video, I recreate the entire process step by step: roasting the pumpkin and seeds, turning the pumpkin into a smooth mash, building a firm dough, rolling and cutting the biscuits, piercing traditional docker holes, baking them until extremely dry, cooling them completely, and finally wrapping individual portions for storage. Traditional hardtack was valued because removing moisture made it far more durable than ordinary bread. This pumpkin version combines that old preservation idea with modern ingredients and finishes with a practical test — soaking the hard biscuits in hot beef and tomato broth until they soften into a hearty meal. If your family ever made hardtack, ship’s biscuits, survival bread, or another long-lasting ration, let me know in the comments how they made it.
