Description

You think green pepper tempura should be simple—yet yours comes out greasy, heavy, or leaves the green part untouched. You watch the color and the clock, but the real answer may be hiding in the sound of the oil. Then one small family lesson turns a picky seven-year-old into someone asking for more. Kenji Nakamura shares three simple secrets for making Japanese green pepper tempura light, crisp, and surprisingly delicious. The first begins before frying: dry every pepper ring completely, coat it with only a whisper of flour, and keep the batter cold and lumpy instead of smooth. The second is precision. Use a thermometer, keep the oil around 175°C, fry only a few rings at a time, and let the oil return to temperature between batches. The final secret is one you cannot measure with a thermometer—you have to listen. As the moisture disappears, the loud hiss becomes a soft drizzle, the bubbles shrink, and a crisp ring gives a small, dry click. Kenji remembers learning that sound from his grandmother when he was seven, and later watches Choko pass the same lesson to Ren. Sometimes cooking is not just about making food. It is about passing your place at the stove to the next generation.
