Mata ne! Your chicken breast looks simple enough—until the thin end turns to cardboard while the thick center is still cooking. You may pat it dry, season it, and put it into a boiling pot the way you've always done. But what if the hottest part of the process is exactly what makes your chicken dry? In my Japanese kitchen, I learned that juicy chicken is less about cooking harder—and more about controlling what happens before and after the flame. From drying the raw breast without rinsing it, evening out its thickness, removing the hidden tendon, and preventing the meat from curling, to using a simple salt-and-sugar treatment and checking your thermometer, each step solves a different problem. And then comes the surprising part: the final method uses **no flame at all**. The chicken goes into hot water, the lid goes on, and the stove is turned off. The gentle heat continues the cooking without the violent rolling boil that can leave the meat tough and dry. When Choko finally tasted the result, she finished the entire bowl—and reminded me of an old Japanese lesson about letting hot water rest instead of forcing it. Sometimes the best way to cook chicken isn't to add more heat. **It's knowing when to turn the heat off.** Chapters: 00:00 Intro — Why Your Chicken Breast Turns Dry 01:14 Chapter 1 — The Mistakes That Make Chicken Tough 03:20 Chapter 2 — Preparing the Breast for Even Cooking 05:18 Chapter 3 — Salt, Sugar, and the Temperature Test 08:00 Chapter 4 — The Japanese Method: Turn Off the Stove #UncleKenjisJapan #JapaneseCooking #ChickenBreast #CookingTips #JapaneseFood #KitchenTips #CookingSecrets #FoodWisdom #ChickenTips #HealthyCooking #JapaneseLifeHacks #JapaneseOrganization #SimpleLiving
