📖 Get Mama Odessa's Complete Soul Food Kitchen Method, every recipe in Big Mama's kitchen written down and measured (106 recipes, 332 pages): https://mamaodessa.com
My name is Odessa Mae. In nineteen thirty one, a baker down in Kentucky named Lively Willoughby worked out how to seal raw biscuit dough inside a cardboard tube so it would keep cold on ice and bust open when you rapped it against the edge of a table. The women who raised me would have looked sideways at that can.
In this video I walk you through every one of them, in the order I cook them, the way my mama and her mama did it.
In this video:
✓ Turn them into dumplings without rolling out a thing
✓ Bake them touching, in cast iron, every single time
✓ Put your thumb in the middle and let the biscuit carry something sweet
✓ Lay them over hot fruit and let them be your cobbler
✓ Roll one out flat and it is a crust for whatever the children will eat
✓ Roll them thin, cut them in squares, and you have got flat dumplings
None of this was ever a secret. It just never made it onto a page, because the women who knew it were too busy cooking to write it down.
Cook one of these tonight the way somebody showed you. Then tell me in the comments whose kitchen you learned it in, what county, and what it smelled like when it was right. I read every one of them.
Stay close to the stove. And remember, the women who fed this country out of one pot knew things we are only just starting to remember.
