Description
Coffee biscotti that actually snap the way they should, and you only need one bowl and a whisk to make them. No mixer, no chilling, no rolling pin. The coffee gives them a deep flavor all the way through, and the double bake makes them crisp enough to dunk without falling apart. This is an easy recipe that keeps for weeks in a jar.
*Ingredients:*
* Instant coffee - 1 tbsp
* Hot water - 1 tbsp
* Sugar - ⅔ cup (130 g)
* Eggs - 2
* Melted butter, not hot - 5 tbsp (70 g)
* All-purpose flour - 2½ cups (310 g)
* Baking powder - 2 tsp (8 g)
* A pinch of salt
That is all it takes. A handful of everyday ingredients and one spoon of instant coffee turn into 15 to 20 bakery quality cookies.
*Instructions:*
1. Dissolve the instant coffee in the hot water and mix well. A very strong espresso shot works too.
2. Whisk the sugar and eggs together, then add the coffee.
3. Add the melted butter, not hot, and mix until the sugar is completely dissolved.
4. Add the flour, baking powder and a pinch of salt, then mix until no dry flour is left.
5. Cover and let the dough rest for 30 minutes.
6. Sprinkle a little flour on the work surface and roll the dough into a long log.
7. Move the log to the baking sheet, cut it in half if it does not fit, and flatten it with your palm.
8. Bake at 350°F (175°C) for 25 minutes.
9. Move the loaf to a cutting board and cut the cookies while still hot, with speed and confidence.
10. Arrange them cut side up on the baking sheet and handle them carefully, they are delicate.
11. Bake for 10 more minutes at 350°F (175°C), then let them cool and crisp up.
The dough comes together in minutes, rests for half an hour, then gets shaped into a log and baked into a flat loaf. Slicing it while it is still hot is the trick to clean edges and no crumbling. After the second bake the cookies dry out into a firm, crunchy cookie with a fine, even crumb and that classic biscotti snap. They are perfect with coffee or tea, they travel well, and they hold their texture fo
