Description
What did a cowboy actually eat on a three-month, thousand-mile cattle drive, with no refrigerator, no store, and three thousand head of beef he was not allowed to touch?
This is the whole day, from the coffee at three in the morning to the last biscuit at dark. The chuck box Charles Goodnight bolted to a surplus army wagon in 1866. The sourdough keg cooks slept with so it wouldn't freeze. Arbuckles' coffee with a peppermint stick in every sack. Sowbelly, Texas butter, Pecos strawberries, spotted pup, pooch, and the one stew every old cowboy remembered by name. Why the crew almost never ate their own herd, and whose beef they ate instead. How a cook kept fresh meat two or three days in June heat with nothing but a tarp and the night air. What vinegar pie was really for.
Every item on that wagon was chosen by men whose lives depended on it keeping, and every one of them still sits on a store shelf today.
Did anybody in your family go up the trail, cook for a crew, or keep a sourdough that outlived them? Tell me below. The dish that gets asked about most is the one I cover next.
