Description
There's a bowl of mashed potatoes on a table somewhere tonight that somebody worked hard on, and it's wallpaper paste. Gluey enough to stand up in a spoon. Or the other failure — thin and gray and weeping water at the edge of the bowl.
It's almost never the potatoes and it's almost never the person. It's one decision made in the first ninety seconds.
My mother made mashed potatoes about four thousand times in that farmhouse outside Cedar Rapids. Hers were never gluey — not once in my whole childhood, and I'd have noticed. No mixer. No thermometer. A pot, a masher, and a rule she never explained because nobody ever asked her.
I'm Otis. Forty years of barns and estate auctions across the Midwest, and the kitchen is the last room I clear.
In this one: why russet and red potatoes behave in OPPOSITE ways and why mashing a red is a fight you can't win — why starting them in boiling water is the ninety seconds that ruins the dish — salting the water is the only chance you get to season the inside of a potato — the knife test, not the fork, not the clock — why a food processor is the most efficient glue-making machine ever put in a kitchen, and the actual chemistry of why (it's the same thing wallpaper paste was made of) — butter BEFORE the milk, and why — and the eighth piece, the one I've never once seen done in a modern kitchen.
Sixty seconds in an empty hot pot. That's the farm trick.
Honest warnings in the video: if you've already made glue, you can't fix it — free starch doesn't go back in the bag. And the whipped-smooth restaurant style is a real dish, just a different one. This is the farm bowl.
Did your mother mash by hand or did she have a ricer? And did she ever put the pot back on the stove? If she did, somebody taught her, and I want to know what county it came from. Tell me — and tell me her name. I read every one.
