Description

📖 Get all 305 of Grandma's secrets here: https://earlenetatum.com There is a sweet potato pie on my counter right now and I am not cutting it until after supper. Most of you drop the potatoes in a pot of water and boil them soft, stir everything in and pour it in the shell, and it goes in the oven wet and comes out wet and the oven gets the blame. So you leave it in longer and it splits down the middle in one long crack and it is still soup under the split. It was never the oven. My grandmother baked one of these every Saturday of my childhood on a wood stove with no dial on it, and hers had a top that cracked into a hundred fine lines and a middle that stood up on the fork. In this one I show you the potato and the oven, the wire sieve that takes every string out, the whole nutmeg, the bowl in the right order, the skillet on the bottom rack that stands in for her oven floor, the two kinds of crack and which one you want, and the shake that tells you it is done. And there is one thing she did to the potato before it ever saw the pie plate that you are not doing. It cost her nothing and it is the reason her middle stood up. I saved it for the end. Four sweet potatoes, two eggs, half a stick of butter and a little can of milk make one pie that feeds eight. Here is the afternoon, in order: 0:00 The pie on my counter and what yours is doing wrong 2:28 Why the filling runs 4:14 The three things a good pie wants 5:40 The potato and the oven 7:38 Saturday at Callie Mae's 9:28 The skin and the strings 11:15 The bowl and the order things go in 13:49 The crust and the bottom 15:44 The bake, the two cracks and the shake 17:38 Three ways I ruined it 19:31 The one thing she did to the potato 21:59 The Sunday table 23:25 The whole thing again in one breath 25:11 What is coming next There is a new recipe here every single day. Next time I am making a peach cobbler, and it is what she did to the peaches before the crust ever went on.
