Description

📖 Get all 356 of Grandma's secrets here: https://earlenetatum.com There is a piece of beef the size of a sleeping dog on my yard table right now. Twenty eight pounds of it. It came out of the same Costco meat case where you buy your brisket, about three steps down from it. The brisket was five ninety nine a pound. This one was two ninety nine, and everybody in that store walked right past it. You know how the other Saturday goes. Eighty dollars for one brisket, fourteen hours by the fire, and it comes off dry at one end and tight at the other. The brisket was fine. So were you. In this one I show you what that piece is and why it came first. Why brisket got so dear, where the shoulder sits in the Costco case and what to ask for, how my church ladies and I split one three ways in the parking lot, how to cut it into Sundays and season it and run the fire, and how much money it puts back in your pocket in one year. And there is one thing Big Mama did with her hands before the knife ever touched it. It is the reason folks give up on this cut, and it is why every slice of hers came off tender. I saved that for the end. One whole beef shoulder from Costco, a low oak fire and one day of patience feeds your Sunday table and fills your freezer for about half what a brisket costs. Here is the whole shoulder, in order: 0:00 A piece of beef the size of a sleeping dog 2:43 How brisket got so dear 4:57 What most of us believe about brisket 6:58 What the shoulder clod actually is 8:55 Where it sits in the Costco case 11:03 Why the shoulder stands next to a brisket 12:58 Opening the bag and cutting it into Sundays 15:08 The fire and the wood 17:17 How you know it is done 19:05 Seven hundred dollars a year and the freezer 21:22 The year I blamed the butcher 22:58 What Big Mama did before the knife 25:19 The whole thing in nine lines 26:27 What is coming next There is a new recipe here every single day. Next time I am doing ground beef. Most of you buy it in a little foam tray for more than it ought to cost, and you never know what went into that tray or when. Big Mama's hamburger came off the very shoulder you just watched me cook. There is one thing she did with her own two hands that beat anything in that case, and I am going to show you exactly how.
