Description

📖 Get all 356 of Grandma's secrets here: https://earlenetatum.com There are two piles of ribs on the table in my yard right now. Three foam trays of baby backs on one side, fifty two dollars. On the other side a pile twice as high that came out of one heavy bag on the bottom shelf, twenty seven dollars. Same hog. You know how the trip to the store goes. You count your people, you read the stickers, you put two trays back and feed six off one rack. The rib was fine. So were you. A good part of that sticker was never meat at all. In this one I walk you through the whole thing. Why a rack of ribs got so dear, where the good rack sits in the store and what to ask for at the counter, how to cut it yourself on your kitchen table the way my grandson did it this summer, and how to run the fire so it comes off right. And there is a piece of every rack you have been paying for that most of you never get to eat. I paid for it three times one Labor Day before I saw where it went. Big Mama ate it on an upturned bucket by the coals every Saturday night, and it was the best supper of her whole week. I saved that for the end. One heavy bag of whole spare ribs, a sharp knife and a low fire fills your table and your freezer for about half what the trays cost. Here is the whole weekend, in order: 0:00 Two piles of ribs and the trays you put back 2:50 Why a rack of ribs costs so much now 4:38 The same rib sold three different ways 6:13 The bag on the bottom shelf and what to ask for 7:42 Why the rib in the bag is the better rib 9:15 Twice the meat for the same money 10:48 Opening the bag 12:22 Cutting it yourself 14:27 The salt, the fire and the bite 16:58 Filling the freezer and what to look for 19:01 The Labor Day I paid for my ribs three times 21:15 What Big Mama did with the strip 24:25 The whole thing in nine lines 25:41 What is coming next There is a new recipe here every single day. Next time I am going back to that meat case for the brisket. The price on a whole brisket has climbed so high folks quit buying it. There is a piece sitting in that same case for about five dollars a pound that does what a brisket does, and Big Mama had it on her table every winter. I am going to show you which one and how she cooked it.
