Description

You have a bottle of white vinegar in your kitchen right now. Maybe under the sink. Maybe at the back of a cupboard. You bought it for one recipe and forgot about it. Meanwhile you are fighting sticky rice, fishy smells, chewy beef, tough braised meat, and greasy eggplant every week. None of that is your fault. Nobody showed you. In my mother's kitchen in Guangzhou, the vinegar never lived under the sink. It lived next to the stove. Here are the 12 ways she used it. Use ordinary white vinegar made for food, not cleaning vinegar. Cleaning vinegar is much stronger and does not belong in your cooking. ⭐ THE 12 TRICKS 1. BRING TIRED GREENS BACK TO LIFE. Limp bok choy, soft lettuce, bendy celery. Fifteen minutes in ice cold water with a small splash of vinegar and they stand up crisp again. My mother said a vegetable is only tired. It is not finished. 2. TAKE THE FISH AND GARLIC OUT OF YOUR CUTTING BOARD. Soap cleans the surface but the smell sits in the grain. Pour a little vinegar over the board, spread it, leave five minutes, rinse with hot water, stand it on its edge to dry. Do the same for your knife. 3. VINEGAR IN THE WATER WHEN YOU BOIL EGGS. One tablespoon in the pot. If a shell cracks, the white sets instantly at the crack and seals itself instead of spilling out. This is how my mother got dozens of tea eggs through the first boil whole every new year. 4. MAKE CHEAP BEEF TENDER FOR A STIR FRY. Slice thin across the grain. Per pound: one tablespoon soy sauce, one teaspoon cornstarch, half a teaspoon vinegar. Twenty minutes, no longer. Any longer and the meat turns soft and grainy. 5. CRISP FISH SKIN INSTEAD OF SOFT. Pat completely dry, brush a very thin layer of vinegar over the skin, pat dry again, rest a few minutes. Hot pan, skin side down, do not move it. Bonus: rub a slice of ginger over the hot pan first so the fish never sticks. 6. SOAK YOUR EGGPLANT BEFORE COOKING. Ten minutes in water with a pinch of salt and a splash of vinegar. It stays pale instead of browning, and it drinks far less oil in the pan. The difference between glossy fish fragrant eggplant and a grey greasy mess. 7. PICKLES IN LESS THAN AN HOUR. Half a cup vinegar, half a cup water, two tablespoons sugar, one teaspoon salt. Pour over sliced cucumber, daikon, or carrot. Thirty minutes to an hour in the refrigerator. Bright, sharp, and still crunchy. ⭐ 8. A SPLASH IN YOUR SOUP OR BONE BROTH. Blanch the bones first, start them in cold water, add about one tablespoon of vinegar to a large pot, and keep the flame low all afternoon. A little acid helps draw more out of the bones and into the broth. You will never taste it. This is how my mother made Cantonese slow fire soup almost every day of my childhood. In a Cantonese family, people do not often say I love you. They say drink your soup. 9. VINEGAR WHEN YOU BRAISE RIBS OR PORK. One tablespoon in the braising liquid at the start. The meat softens and comes away from the bone sooner, and the sourness balances the sweetness in the sauce. This is where real sweet and sour ribs come from. 10. STIR FRIED POTATOES THAT STAY CRISP. Thin matchsticks, rinsed until the water runs clear. Very hot wok, garlic, dried chilies, and a splash of vinegar poured down the hot side of the wok near the end. The acid firms the potato so it snaps between your teeth. 11. TAKE THE FISHY SMELL OUT OF SEAFOOD. Ten minutes in cold water with a good splash of vinegar before cooking, or rub a whole fish with vinegar and ginger. Set a small bowl of vinegar near the stove while it fries to catch what escapes. ⭐ 12. A FEW DROPS IN YOUR RICE WATER. About half a teaspoon for every three cups of rice. The grains cook up separate, whiter, and softer to the bite, and you will not taste the vinegar at all. My mother did this every day of the Guangzhou summer. So nothing is wasted. Nobody will ever make a television commercial for white vinegar. There is nothing more to sell you once you own the bottle. My mother had one bottle next to the stove and it did all of this. Go find yours and move it next to your stove where it belongs. Try one this week. Then come to the comments and tell me: what did your mother or grandmother use vinegar for in her kitchen? Where was she from? What did her kitchen smell like when dinner was almost ready? I want to hear it before it is gone. I put out a new video every day. Subscribe so you do not miss one.
