Description

The Chinese Way to Make Cheap Meat Tender in 10 Minutes 📖 Get Make It Go Further — the habits from my mother's kitchen, written down for an American grocery store (244 pages, 46 dinners): https://mrsjinkitchen.com 🥢 Subscribe for a new kitchen habit every week — ordinary groceries, better dinners. Tender beef with cabbage starts with the direction of the cut, a light cornstarch coat, and enough heat for the pan to stay lively. The 10 minutes in this title are the refrigerated resting time for thin beef before cooking. It still needs cooking time. This is for a suitable lean cut such as top round, not a promise to turn every stewing cut tender in 10 minutes. 🥣 THE CLOCKAbout 20 minutes hands-on plus 10 minutes refrigerated resting. Makes 4 servings. 🥣 BEEF AND CABBAGE RICE BOWLS • 1 lb top round steak (454 g), a whole-muscle cut, thinly sliced across the grain • 1 tablespoon cornstarch (the light coat that changes the surface) • 1 tablespoon water (helps the coating spread) • 1 tablespoon reduced-sodium soy sauce for the beef • 3 cups shredded cabbage (about 225 g) • 2 green onions, sliced, whites and greens separated • 1 tablespoon grated ginger • 2 tablespoons neutral oil, divided • 2 tablespoons reduced-sodium soy sauce for the sauce • 1 tablespoon rice vinegar • 1 teaspoon sugar • 3 tablespoons water for the sauce • 4 cups cooked rice, hot, for serving Slice beef thinly across the grain. Mix with cornstarch, 1 tablespoon water, and 1 tablespoon soy sauce. Cover and refrigerate 10 minutes. Keep raw beef separate. Stir the remaining 2 tablespoons soy sauce, vinegar, sugar, and 3 tablespoons water together in a clean cup. Heat a skillet over medium-high heat. Add 1 tablespoon oil. Cook half the beef in a single layer until its thickest pieces reach 145°F (63°C). Transfer to a clean plate and rest 3 minutes. Repeat with remaining beef and a little more oil. Expect about 3 to 5 minutes per batch; check temperature. Cook cabbage and green onion whites in remaining oil for 3 to 5 minutes. Add ginger for the last 30 seconds. Add the clean sauce mixture and bring to a boil. Return the cooked beef and any juices to the skillet. Toss briefly until everything is hot. Do not use leftover raw-beef marinade as sauce. Serve over hot rice with the green onion greens. Divide into 4 bowls. 🥣 I WILL NOT ARGUEGarlic or sesame oil is fine. Broccoli can replace cabbage. Chuck needs a slower meal. 🥣 THE PAN IS HONESTLong, chewy strands: the cut followed the grain. Dry strips: too much time over heat. Gray beef: a crowded pan. Gummy coating: too much starch or too little heat. A tough stewing cut: the wrong job for a quick pan. 🥣 ONE QUIET THING ABOUT THE STORECompare the price per pound of pre-cut strips and suitable whole cuts. Savings vary by store. Soy sauce and cornstarch serve many dinners. 🥣 THE HABITKeep the 10-minute raw-beef rest in the refrigerator, never on the counter. Refrigerate cooked leftovers within 2 hours and use within 3 to 4 days, or freeze promptly. Reheat leftovers to 165°F (74°C). 🥣 WHAT I WOULD ASK OF YOUCarry the direction of the fibers and the light coat into your next dinner. Did the beef come out softer? Had you been cutting along the grain? Tell me your state. 🥣 NEXT TIME IN THIS KITCHENThe cabbage left from this dinner has another place to go.
