📖 Get Make It Go Further — the habits from my mother's kitchen, written down for an American grocery store (244 pages, 46 dinners): https://mrsjinkitchen.com Rice crust, the gold layer on the bottom of the pot that most people soak off and throw away, made on purpose, lifted out whole with a wet cloth, and poured over with hot soup until it sings. If yours comes out black in the middle or glued to the pot, it is not the stove. It is the pot, the oil, the fire and the hand that cannot wait. Every measure is below. Hao ma? 🍚 THE CLOCK 5 minutes hands-on, 30 minutes of the pot working alone, 5 minutes on the cloth. Any night you make rice, in a heavy pot, not a rice cooker. 🍚 THE CARD: MY MOTHER'S RICE CRUST Serves 4, plus the crust. 2 cups jasmine or long-grain rice, washed until the water runs nearly clear 2½ cups (600 ml) water 1 tbsp neutral oil (the film that turns glue into crust) A heavy, plain-metal pot with a tight lid (coated pots cannot make a crust; thin pots scorch) A kitchen towel, wrung out in cold water Rice and water in the heavy pot, lid on. Bring to a boil on high, about 5 minutes, until the lid rattles. Lowest flame. Lid on. 12 minutes, until the whispering stops. Drizzle the oil down the inside wall of the pot so it runs under the rice. Lid back on. Lowest flame 8 to 10 more minutes, until the pot crackles softly and smells of popcorn. If it smells of smoke, the flame was too high. Off the heat. Set the pot on the folded wet towel, lid on, 5 minutes. Do not touch the crust. Spoon out the soft rice. Tilt the pot; when the crust slides, turn it out onto a plate in one piece. Break and eat warm, or dry fully and keep in a tin. 🍚 THE SIZZLE Put 3 or 4 pieces of crisp crust in the bottom of a deep bowl. At the table, not over the stove, pour hot chicken soup (just below boiling) over them. It crackles for a few seconds. Eat at once. 🍚 THE SECOND LIFE Dry crust pieces, 20 seconds in hot oil (350°F) until puffed, drained, with a pinch of salt or sugar. Or broken into the pan with an egg and green onion. 🍚 I WILL NOT ARGUE Jasmine or long grain. Salt or sugar on the fried crust. Any hot soup for the sizzle. 🍚 THE PAN IS HONEST Black in the middle, white at the edge → thin pot, or flame too high. Wet gray layer glued on → no oil under the rice. No crust at all → coated pot or rice cooker. Shards, half left on the pot → pried while the pot was hot. Bends instead of snapping → not dry enough; back in the pan. One gold round that slides out → the cook's reward. 🍚 ONE QUIET THING ABOUT THE STORE A heavy plain pot is about $30, once. A coated pot is about $25 and is replaced every few years when the coating flakes. Nobody is cheating you. Nonstick is built to stop the crust. 🍚 THE HABIT Soft rice goes into the refrigerator within the hour and keeps 4 days. Fully dried crust keeps 2 weeks in a tin at room temperature; it never goes in the refrigerator, where it goes soft. 🍚 WHAT I WOULD ASK OF YOU Carry two things: the heavy pot with the low fire at the end, and the wet cloth after. Then tell me if the crust came out in one piece, honestly whether you were soaking the pot, and your state. 🍚 NEXT TIME IN THIS KITCHEN That tin of crust, an afternoon of snacks. #ricecrust #chinesecooking #nowaste 🥢 Subscribe for a new kitchen habit every week — ordinary groceries, better dinners.
