📖 Get Make It Go Further — the habits from my mother's kitchen, written down for an American grocery store (244 pages, 46 dinners): https://mrsjinkitchen.com 🥢 Subscribe for a new kitchen habit every week — ordinary groceries, better dinners. Fried rice, my mother's way, from the cold bowl you were about to throw out. If yours came out a gray, wet clump with egg smeared through it, the rice was too fresh, the pan was too full, and the egg went in at the wrong time. Cold rice is the SECRET, not the problem. Every measure is below. Hao ma? 🍚 THE CLOCK 10 minutes hands-on, no waiting, if the rice was cooked yesterday. Any tired weeknight. 🍚 THE CARD: MY MOTHER'S TUESDAY FRIED RICE Serves 4. 4 cups cold cooked rice, at least a day old (the dried skin on each grain is what makes it fry) 3 eggs, beaten with a pinch of salt 3 tbsp oil, or better, chicken fat lifted from cold soup (the fat is most of the flavor) 1 tbsp fresh ginger, minced 1 cup leftover meat and vegetables, cut to the size of a grain of rice 2 tbsp soy sauce ½ tsp sugar (toasts on the hot pan) ½ tsp salt, ¼ tsp white pepper 3 green onions, cut fine, added with the heat OFF Break the cold rice apart with wet hands until no clumps remain. Heat a wide pan on high until a drop of water skips across it. Add 1 tbsp fat. Pour in the eggs, stir 20 seconds until barely set, and slide them out onto a plate. Add the rest of the fat and the ginger. In 10 seconds add half the rice. Press it flat, leave it 30 seconds, then toss. Repeat with the rest of the rice. Keep the heat on high the whole time, about 3 minutes, until the grains jump and rattle. Add the leftover meat and vegetables. Toss 1 minute. Pour the soy sauce down the hot side of the pan, not on the rice. Let it hiss 5 seconds, add the sugar and salt, and toss through. Return the eggs, break them up with the spoon, add the pepper. Turn off the heat. Add the green onions and toss once. Serve at once. 🍚 I WILL NOT ARGUE Sesame oil at the end, or none. Garlic with the ginger, or none. Frozen peas and carrots if the refrigerator is empty. Any meat, or none. 🍚 THE PAN IS HONEST Wet clump → the rice was fresh. Gray and soft → the pan was warm and full. Egg smeared through → it went in with the rice. Tastes like a bottle → flavorless oil, soy on the rice. Brown and salty → the soy went in early. Limp gray green onion → it went in with the fire on. Crisp bits stuck to the pan → the cook's reward. 🍚 ONE QUIET THING ABOUT THE STORE Restaurant fried rice is about $12, and most of it is rice. Your cold rice is already paid for, two eggs are about 50 cents, and the green onion came from a bunch you had. About $1 a plate at home. Nobody is cheating you. You are paying someone to keep cold rice on hand. 🍚 THE HABIT Cook the pot full. Half goes into a covered bowl in the refrigerator door before dinner, and keeps 4 days. Cooked rice freezes flat in bags for 2 months. Green onion whites regrow in water on the sill; they never go in the freezer. 🍚 WHAT I WOULD ASK OF YOU Carry two things: the cold bowl of rice, and the hot, empty pan. Then tell me if every grain came out separate, tell me honestly if you were cracking eggs onto the rice, and tell me your state. 🍚 NEXT TIME IN THIS KITCHEN Eggs in hot oil with tomato. A whole dinner from two things. #friedrice #chinesecooking #leftovers 📖 Get Make It Go Further — the habits from my mother's kitchen, written down for an American grocery store (244 pages, 46 dinners): https://mrsjinkitchen.com
