Description

📖 Get Make It Go Further — the habits from my mother's kitchen, written down for an American grocery store (244 pages, 46 dinners): https://mrsjinkitchen.com Frozen dumplings, pan-fried with a crisp gold lace, straight from the bag and never thawed, plus my mother's boiled version and the dip she never bought in a packet. If yours stick, tear and come out cold in the middle, it is not the bag. It is the thaw, the lid and the hand that cannot wait. Every measure is below. Hao ma? 🍚 THE CLOCK 2 minutes hands-on, 10 minutes in the pan with the lid on. Any weeknight, straight from the freezer. 🍚 THE CARD: PAN-FRIED FROZEN DUMPLINGS WITH LACE Serves 2 to 3. 16 to 20 frozen dumplings, NOT thawed (a thawed wrapper goes tacky and tears) 2 tbsp neutral oil ½ cup (120 ml) water + 1 tsp cornstarch, stirred (the starch stays behind and fries into lace) 2 green onions, cut fine Heat a nonstick or well-seasoned pan on medium-high until a drop of water skips. Add the oil and let it shimmer, about 30 seconds. Set the frozen dumplings in one layer, flat side down, none touching, in a circle. Fry 2 minutes until the bottoms are pale gold. Do not move them. Stir the cornstarch water, pour it in around the edge, and put the lid on at once. Steam 7 to 8 minutes, until the lid goes quiet and the wrappers turn translucent. Lid off. Cook 1 to 2 minutes more until the water is gone and the pan crackles. The lace turns gold at the edges. Tilt the pan; when the dumplings slide as one piece, put a plate over the pan and flip. Filling should read 165°F for chicken or 160°F for pork or beef. Green onions on top. Serve with the dip. 🍚 THE POT (boiled) Bring a large pot of water to a boil. Add frozen dumplings, stir once. Each time it returns to a hard boil, add ½ cup cold water; do this 3 times, about 8 to 10 minutes total. Done when they float AND swell and the wrapper is clear. Drink the cooking water after, with green onion. 🍚 THE DIP (no packet) 3 tbsp soy sauce, 2 tbsp rice vinegar, ½ tsp sesame oil, 1 tsp ginger cut in fine shreds, a pinch of sugar. Stir in a saucer. Keeps a week in a jar. 🍚 I WILL NOT ARGUE Three cold waters or two. Chili oil or garlic in the dip, or neither. 🍚 THE PAN IS HONEST Stuck and torn → thawed first, or pried before they let go. Burnt bottom, cold middle → no lid. Fused to each other → set down touching, or a bag that thawed in the store. Split skins in the pot → a hard rolling boil. No lace → plain water, or the pan not hot before the oil. Gold lace in one sheet → the cook's reward. 🍚 ONE QUIET THING ABOUT THE STORE A 50-count plain bag is about $9. A 12-count box with a sauce packet is about $6. The box pays for the tray, the packet and the picture. Nobody is cheating you. A soft-cornered box has thawed once on a truck. 🍚 THE HABIT Buy the big bag and keep it frozen hard; never refreeze a thawed dumpling. The dip keeps a week in the refrigerator door. 🍚 WHAT I WOULD ASK OF YOU Carry two things: the frozen dumpling into the hot pan, and the hand that waits. Then tell me if every one came out whole, honestly whether you were thawing them, and your state. 🍚 NEXT TIME IN THIS KITCHEN That saucer of ginger and vinegar, on everything. #dumplings #chinesecooking #frozendumplings 🥢 Subscribe for a new kitchen habit every week — ordinary groceries, better dinners.
