Description

Why does city chicken have no chicken in it? Because this forgotten mid-west thrift recipe turned cheap pork and veal into fake drumsticks when real poultry cost too much. In hard times across Chicago, Omaha, Cleveland and almost throughout the entire country families skewered breaded pork/veal meat, fried it like chicken, and served “city chicken” with a straight face. Today on the Iron Spoon Kitchen, I’m recreating that Depression-era mock chicken digging into the food history behind why the name stuck. To be clear, there’s no actual chicken. It's just American ingenuity, vintage technique, and a plate full of nostalgia. #ForgottenRecipes #FoodHistory #Nostalgia #CityChicken #DepressionEra #VintageRecipes #AmericanFoodHistory
