Description

📖 Get all 305 of Grandma's secrets here: https://earlenetatum.com There was a pan of turkey wings on the table at the church supper last Sunday, baked in the oven and brown on top, and the meat held that bone like it was glued. That is not the wing's fault. A turkey wing is an old bird's arm, full of sinew and gristle, and dry heat pulls the water out of it before the sinew ever lets go. It wants a lid and a low fire and it wants to start wet. I have never opened a packet of gravy in my life. This is the pot the way it sat on the back of Callie Mae's wood stove every December: the wing cut at the joints and the tips kept, skin side down in a dry iron pot with salt and pepper and sage and one onion and one cup of water, the lid on and the lowest fire for an hour, then the browning that comes at the end and not the beginning, then a spoon of flour in the pot's own fat and the gravy that comes out of it by itself. And one thing she did in the last twenty minutes that goes against everything I tell you about that lid. It is the reason the meat came off her wings in one piece. It is saved for the end. Five wings and one onion and a spoon of flour: Sunday supper for six over rice for less than ten dollars. Here is the afternoon, in order: 0:00 Why a turkey wing comes out dry at the bone 2:02 The wing: which package, and cutting it at the joints 4:01 What the oven and the packet actually do to a wing 6:16 The pot and the first hour: water first, lid on, lowest fire 8:30 December: the turkey farm and the croker sack of wings 10:35 The browning that comes second, in the wing's own fat 12:35 The gravy out of the pot, and what the tips are for 14:45 Salt, pepper, sage and one onion, and what stays on the shelf 16:26 How you know it is done: the bone, the fork, and one piece 18:14 The three ways I have ruined this pot 20:07 The last twenty minutes, and the lid 22:31 Rice, cornbread, and Monday 23:34 The whole pot in a few lines, and your Sunday There is a new recipe here every single day. Come back and cook with me. Next time I am doing chicken wings, and they are going in the very oven I told you to keep a turkey wing out of. A six week bird wants the opposite of what you saw today. Crisp with no grease in the house, and it was one thing out of her cabinet that did it.
