Description

Ground beef hit the highest price it has ever been in this country: seven dollars and sixteen cents a pound on average in August. My mother fed nine people and put beef on the table maybe once a week, and not one of us ever felt poor. She did it with six proteins that cost almost nothing, and every one of them is under five dollars at Walmart this week. 📖 My mother's whole way of running a house is written down in one book, The Old Mexican Way: https://oldmexicanway.com The one idea that makes it work: a great deal of the cheapest thing, beans, lentils, rice, made delicious by a small amount of something with a strong taste. The expensive thing does flavor work, not calorie work. When beef costs seven dollars a pound, you do not give up beef. You change its job. The 6, counting down (Walmart prices this week, yours may differ): 6. El yogur natural: Great Value plain yogurt, 32 oz, $2.77. Licuados, crema at the end of the month, and a free táper 5. La crema de cacahuate: Great Value peanut butter, $1.98. The protein children eat without a fight, and the mole secret 4. Las lentejas: Great Value lentils, 1 lb, $1.92. No soaking, soft in twenty minutes, sopa de lentejas for the whole house 3. El pollo: Great Value frozen drumsticks, 4 lb, $4.83. Two suppers and a caldo out of one bag 2. Los frijoles: Great Value dry pinto beans, 2 lb, $1.98. With corn tortillas, the supper our people ate for thousands of years 1. Los huevos: Great Value eggs, a dozen, $1.47. About twelve cents an egg, and the fastest protein in the house One of each: about fifteen dollars, for a week of protein. One pound of ground beef: seven. What my mother did with the beef: one pound, once a week, browned with onion and chile, and stretched. Into the beans for frijoles charros, into the lentils, into the rice with a can of tomato. The beef did the flavor. The six did the rest. This week, one thing: make one supper you would normally make with a pound of beef with half a pound, and fill the other half with lentils or beans. Watch who notices. Safety, said plainly: thaw chicken in the refrigerator, never on the counter, and wash your hands and your board after raw chicken. Keep eggs in the refrigerator on a shelf, not in the door. If you have a dog, check your peanut butter label for xylitol.
