Description
It is your anniversary, and a fifty eight dollar steak comes to the table still
hissing, butter bubbling at the edge. The week before, you cooked the same cut at
home and it came out grey and tough.
So you figure the restaurant has better beef. Most of it is not the beef. I know,
because for nine years I carried the beef in through their back door.
I am Earl. Thirty one years behind the meat counter, and a lot of Friday mornings
in the back of a steakhouse kitchen, watching a chef named Sal do what home cooks
never see.
Six things a steakhouse kitchen does that yours does not, counting down. Why the
steak starts thicker. What the grade really changes, and why it matters less than
you think. How much salt they use, and why I got it wrong at home for twenty
years. The fat at the end that you taste and never see. Where they let it rest.
And the heat, and how to get close to it tonight in your own kitchen.
If you have not seen the week of dinners video, watch it next: twenty eight beef
dinners for forty eight dollars, night by night.
Nobody paid me for this. There is nothing here to buy. I do not work for any
store or any restaurant.
Your homework: next time you cook a steak, ask for it an inch and a half thick,
dry it well, and give the pan ten full minutes. Then tell me in the comments
whether it came out closer to the restaurant than ever before.
