Description
Is store ground beef really worse than grinding your own? I bought a pack of
ground beef and a chuck roast, ground the roast myself in my wife's old food
processor, made burgers from both, and put them in front of my neighbors Ted
and Donna without telling them which was which. Ted has told me for twenty
years that he can taste the difference from across the room. One of their
answers surprised me more than anything in thirty one years.
I am Earl. Thirty one years behind the meat counter, and a lot of those years
I was the one packing the ground beef into the trays.
Three rounds. The price and the grind: the one word on the label that tells
you whether extra fat can be added, and how to grind a roast in ten minutes
without a grinder. What you see in the raw meat before it touches a pan, and
the part about ground beef I never told a customer. And the table, with a
card face down under the salt shaker and six words from Donna I will not
forget.
If you have not seen the stew video, watch it next: why the little cubes of
stew meat cost more than the whole roast right next to them.
Nobody paid me for this. There is nothing here to buy. I do not work for any
store or any brand.
Your homework: buy one pound of chuck and one pound of store ground beef,
make one burger from each the same way, and do it blind with somebody at your
table. Then tell me in the comments which one they picked, and whether they
were right.
