Description
In thirty one years behind the meat counter, I never once took a ribeye home
for my own family. I had an employee discount the whole time.
Every Friday I walked out the back door with a package in white paper instead,
my name on it in grease pencil. And every Friday, Carol asked me the same
question at the kitchen door. What did you bring?
Five cuts, counting down. The cheapest real beef in the building, and the soup
that sets like jelly overnight. The Sunday roast your grandmother knew by name,
and the bone that tells you when it is done. A steak hiding inside a cut you
already buy. The steak a little Ohio shop was cutting twenty years before a
university gave it a name, at half the price of ribeye. And number one, the
butcher's steak: there is only one on every animal, and for most of the last
century it went home in somebody's apron. Including mine.
If you have not seen the grass fed video, watch it next: what the green
sticker really buys, and which one I buy with my own money.
Nobody paid me for this. There is nothing here to buy. I do not work for any
store or any brand.
Your homework: ask your meat counter one question this week. Do you ever get
hanger steak? Then tell me in the comments what they said, and what part of
the country you are in.
