If you cook for one, you know the dish in the back of the refrigerator. It held supper on Sunday, and you are still eating it on Thursday.
My name is Arlie Caudill. I was raised up a holler in Letcher County, Kentucky. Ruby and I raised seven younguns in this house, and now some weeks it is just me at the table. After Papaw passed, my Mamaw cooked for one at the head of this holler for years, and I never once saw her throw out a supper.
In this one I show you ten suppers that fit in one plain bread pan. There is meatloaf and potatoes, a cabbage roll with no rolling, a shepherd’s pie that stands up, and a bread pudding made from the bread you were fixing to throw to the chickens. Each one runs three to five dollars and takes about ten minutes of your hands.
I also tell you what can go wrong, what this will not do, and why most folks give up on cooking small.
Mamaw told me once to cook for the table you have, not the table you used to have. The rest of what she taught me is set down in my book at arliecaudill.com.
Tell me in the comments what you cook in when it is just you.
