Description
Old Fashioned Beef Stew — one pound of stew beef, simple pantry ingredients, and a big pot that feeds the whole family.
With the price of beef these days, you've got to stretch it as far as you can, and there's nothing better for that than a big pot of old fashioned beef stew. We coat the stew beef in a little flour and pepper, sear it, scrape up all those brown bits with beef broth and a splash of red wine vinegar, and let it simmer low and slow before the potatoes, carrots, and onion go in. Simple ingredients, but so much bang for your buck — and you may even have a couple of bowls left for lunch tomorrow.
INGREDIENTS
🥩 For the Beef
• 1 pound stew beef
• ¼ cup all-purpose flour
• ⅛ teaspoon black pepper
• 2 to 3 tablespoons olive oil, plus more as needed
🍲 For the Broth
• 4 cups beef broth (one 32-ounce carton), divided
• 2 tablespoons red wine vinegar
• 2 tablespoons tomato paste
• 2 bay leaves
🥕 For the Vegetables
• 1 small to medium onion, chopped
• 3 to 4 carrots, cut into small chunks
• 4 to 5 small Yukon Gold potatoes (or 2 large baking potatoes), cubed
🧂 To Finish
• About 2 teaspoons salt (a little scant)
• Black pepper to taste
• Fresh parsley for garnish
⏲️ COOK TIMES
• Simmer covered on low: 1½ hours
• Add onions and carrots: 10 minutes
• Add potatoes: 30 minutes
💡 Want it soupier? Stir in a little more beef broth or water at the end.
