Description

Get my printed cookbook: 36 recipes, 60 kitchen methods: https://vernasbook.com Open the cabinet over your stove and look at the biggest baking dish you own. Every recipe you ever clipped was written for a table of six, and that is why you eat the same supper on Monday, Tuesday, and Thursday. That was never your fault. That was the pan. The fix is the plain nine by five loaf pan, and it holds just enough for two suppers. My mother owned exactly one, and she never once baked bread in it. Stay to the end to find out what she did cook in it. 🍲 THE TEN LOAF PAN DINNERS (each makes 2 portions) 1. SALISBURY STEAK IN ONION GRAVY: 1/2 lb ground beef, 1/4 cup crushed crackers, splash of milk, Worcestershire, salt, pepper, 1/2 onion sliced, 1 cup brown gravy. Foil on, 375°F, 35 to 40 min, until 160°F inside. 2. CHICKEN POT PIE WITH A BISCUIT TOP: 1 1/2 cups cooked chicken, 1 cup frozen mixed vegetables, 1/2 can cream of chicken soup, 1/4 cup milk, 4 refrigerated biscuits. 375°F: filling alone 15 min, then biscuits on top 18 to 20 min. 3. SALMON LOAF: 14 oz can pink salmon (bones and all), 1/2 cup crushed crackers, 1 egg, 1/4 cup minced onion, 1 tablespoon lemon juice. 350°F, 35 to 40 min. 4. HAM AND POTATO SCALLOP: 2 medium potatoes sliced thin, 1/2 onion, 1 cup diced ham, 2 tablespoons flour, 1 tablespoon butter, 1 cup milk, shredded cheddar. 375°F covered 45 min, then cheese on and uncovered 15 min. 5. MOUNTAIN BAKED BEANS: 15 oz can pork and beans, 2 strips bacon, 2 tablespoons brown sugar, 1 tablespoon ketchup, 1 teaspoon yellow mustard, 2 tablespoons chopped onion. 350°F, uncovered, 40 to 45 min. 6. TUNA NOODLE BAKE: 4 oz egg noodles (boil 5 min, one minute short), 5 oz can tuna, 1/2 can cream of mushroom soup, 1/4 cup milk, 1/2 cup frozen peas, 1/3 cup shredded cheddar, buttered cracker crumbs. 375°F, 25 min. 7. CHICKEN AND STUFFING BAKE: 2 boneless skinless chicken thighs, 1/2 can cream of chicken soup, 1/4 cup milk, 1 cup dry stuffing mix, 1/3 cup broth, 1 tablespoon melted butter. 375°F covered 35 min, uncovered 10 min, chicken to 165°F. 8. SMOKED SAUSAGE, POTATOES AND GREEN BEANS: 6 oz smoked sausage sliced, 2 small potatoes cubed, 1 can green beans drained, 1 tablespoon bacon grease or oil. 400°F: potatoes alone 20 min, then add the rest for 20 min. 9. PEACH COBBLER FROM A CAN: 15 oz can sliced peaches in syrup (do not drain), 1/4 cup butter, 1/2 cup self-rising flour, 1/2 cup sugar, 1/2 cup milk, cinnamon. Melt the butter in the pan, pour the batter over it, spoon the peaches and syrup on top, and do not stir. 350°F, 40 to 45 min. 10. POT ROAST FOR TWO: 1 lb chuck roast cut in two, 2 small potatoes quartered, 2 carrots, 1/2 onion, 1/2 cup beef broth, a spoonful of Worcestershire. Foil crimped tight, 325°F, 2 1/2 to 3 hours. 🔥 BEFORE YOU START • Use a 9x5 pan, metal or glass, and set it on a baking sheet. Something will bubble over. • Ground beef to 160°F, chicken to 165°F. • Every recipe here makes two portions, no more. If this saves you from one more Thursday of the same casserole, I would take a subscribe as a personal kindness. It costs you nothing and it helps me keep making these for you. Have a blessed day. -Verna CHAPTERS 0:00 The casserole dish that was never your fault 1:10 Why a loaf pan 1:56 1. Salisbury steak in onion gravy 4:12 2. Chicken pot pie with a biscuit top 5:45 3.
