Crispy walnut cookies with a light, crumbly texture and a perfect snap -- these are simple to make, packed with chunky walnuts, and ready in under an hour with basic pantry ingredients. *Ingredients:* * Walnuts - 1 cup (100 g) * Sugar - ½ cup + 2 tbsp (120 g) * Eggs - 2 * Vegetable or seed oil - ½ cup (100 g) * Milk - 2 tbsp (30 g) * Lemon zest - from 1 lemon * All-purpose flour - 2½ cups (300 g) * Cornstarch - ⅔ cup (80 g) * Baking powder - 2 tsp (8 g) * A pinch of salt * Extra sugar for rolling (optional) These cookies have a satisfying snap when you break one, a light and crumbly interior, and walnuts in every single bite. The lemon zest keeps them bright and fresh, and the sugar coating gives them a sweet, crispy finish. They store well, hold their shape, and make a great gift or just a treat to keep around the house.
