Description
Two steaks on two white plates, and four people at my kitchen table who do not
know which is which. One cost twenty dollars. The other cost six.
I am Earl. Thirty one years behind the meat counter, and for most of them I told
customers the same thing: there is a steak in the case that eats like a ribeye
for a third of the price, and hardly anybody asks for it. This time I tested it
in front of my own family.
Where I bought them, and the one thing I asked the man behind the counter for.
Why the cheap one is so hard to find. How I cooked both so neither had an
advantage, and the two minute cut that makes the cheap one work. What happened
when the plates went down, and the one person at the table who surprised me.
Then how to get one yourself, what to ask for by name, and what to buy if your
store does not have it.
If you have not seen the video about the word fresh at the meat counter, watch it
next. The question at the end of that one is the same question that gets you
this steak.
Nobody paid me for this. There is nothing here to buy. I do not work for any
store.
Your homework might be the best dinner you have all month. Buy one of each, cook
them exactly the same, have somebody else put them on numbered plates. Then tell
me in the comments who picked what at your table.
