Description

On the 29th of August 1892, a hotel in Ottawa served a whole banquet cooked by nothing but electricity. A newspaper praised it for "no scorching in one part and half-done-ness in another". 134 years later, every kitchen gadget still promises the same thing. This is the real Canadian story behind the air fryer craze: the wartime tube still sitting inside your microwave, the Ottawa engineer who built the Instant Pot after Nortel collapsed, the 215,000 sold in a single day and the bankruptcy court that followed, the transistor ovens that could replace both the microwave and the air fryer, the Ottawa gallium nitride chip company sold for $830 million, and the metal, gallium, with a deadline on the calendar. Then we imagine a Canadian oven of the future. It is not a real product and no company is building it. Dates, figures, people and quotes about real companies and governments come from public sources, including the Historical Society of Ottawa, US patent records, Infineon, Rio Tinto, Natural Resources Canada, Health Canada, Which?, and news reporting. Some figures are as reported in the press. Canada Invents is part of the same family as True North Invents. The full story of the metal is on True North Invents.
