The eggplant slices are coated with seasoned breadcrumbs, cheddar cheese, egg, and fresh parsley, then baked until golden and crispy on the outside while staying tender inside This easy oven-baked eggplant recipe is perfect as a vegetarian appetizer, side dish, or light meal.
