Civil War food, Hardtack, Soldier rations A Union soldier opens a piece of hardtack before breakfast. He breaks it in half. Something inside moves. The cracker has been sitting in his pack long enough for insects to get into it. So he drops it into his coffee. The heat brings the insects to the surface. He skims them off. And then he eats the cracker. That was breakfast. And hardtack was only the beginning. Civil War soldiers were expected to march, fight, sleep outdoors, and keep moving on food that had to survive the same conditions they did.
