Description

Your mangú comes out stiff like paste, or lumpy no matter how hard you mash, or it turns into a brick on the plate before everybody sits down. There is one ingredient that fixes all of it and it costs nothing: cold water. Not the cooking water. I'm Rosa. I cooked for twenty-four years in a Dominican kitchen in Washington Heights, and before that my mother ran a comedor in San Francisco de Macorís, where mangú was the first thing she ever taught me to make. Here are the seven things she knew, including the right order for los tres golpes. The method, so you can keep it: • 5 green plátanos — verde verde, no yellow anywhere, hard as a bat • Cut the ends, score the skin down the ridges lengthwise, lift the strips off with your thumb (oil your hands and the blade first) • Cut in 3, boil in salted water 20 to 25 minutes, until a fork goes through with NO resistance • Mash IMMEDIATELY while screaming hot, with 1 tbsp butter or salami fat and about 1 cup of ICE-COLD water, a splash at a time • Looser in the pot than you think — it firms on the plate • 1 red onion sliced thin, softened, with a good splash of white vinegar, over the top. This is not a garnish. • Los tres golpes in ONE pan, in order: salami first (scored so it lies flat), then queso de freír in that fat (do not move it until it lets go), then the eggs • Feeds 4, or 2 if it is Sunday Did anybody ever tell you about the cold water? And do you eat your mangú in the morning or at night? Tell me where your family is from in the DR. I read every comment. Next video: pollo guisado, the chicken that goes on top of all of this.
