There is a piece of beef on my pit in the back yard right now with three bones in it, and it is not coming off until the street lights come on. Most of you cooked yours the way you cook the long rack off the hog. Same afternoon, same fire, same sauce, and when the bones went loose you called it done. Then the bone came out in your hand and the meat sat there in one slab, and forty dollars of beef went around the table in a bowl. A beef rib is not a rib. It is a roast with a handle on it, and you have been cooking the handle. I learned it from a woman who got one piece of beef a year off the man in town and never lost a bone off it. In this one I show you which piece to ask for and where the store hides it, why it is a roast and not a rib, the salt, the fire and the count, the long afternoon where the bones start to come out of the meat, how you know it is done with nothing but your hands, and how you cut it so it comes to the table in slices as thick as your thumb. And there is one thing she did to the bone side before it ever saw the fire that you are not doing. One minute of work, and it is the reason the meat stayed on the bone until the knife. I saved it for the end.
One three bone piece, about six pounds, feeds six with bread and greens.
Here is the afternoon, in order:
0:00 The piece on my pit and what yours did in the bowl
1:56 Two kinds of beef rib and where the store hides the right one
3:51 Why it is a roast and not a rib
5:38 What to say to the man at the counter
7:03 The salt on Friday night
8:41 The fire and the five count
10:34 The long afternoon and the bones coming out
12:33 How you know it is done
14:16 The sack and the knife
15:50 Nineteen sixty nine and the two I ruined
18:16 The one thing she did to the bone side
20:57 If you have no yard
21:33 The whole afternoon again and your Saturday
23:06 What is coming next
There is a new recipe here every single day.
Next time I am doing a neck bone boil in the black pot over the fire in the yard, and there is an order things go in that pot that most of you have backwards.
