Description

Your air fryer was supposed to make everything crispy, but your chicken comes out pale, your fries come out soggy, your sticky wings burn on the outside while they are still pink inside, and the kitchen fills with smoke. It is not your machine, and it is not you. Nobody ever told you the rules. My name is Mei Lin. I grew up in Guangzhou in the south of China, where the roast duck shops, the chestnut sellers and the sweet potato men on the street were cooking with hot, moving air long before anyone sold an air fryer. In this video I share fifteen Chinese tricks that fix the most common air fryer mistakes, then walk you through the Cantonese dishes I make in mine every week. In this video: The roast duck shop secret that makes chicken skin crisp like paper The one mistake almost everybody makes when they fill the basket Why you should brush on your oil and stop using aerosol cooking spray The cornstarch trick behind the crackly coating at Chinese restaurants How takeout kitchens cook wings twice, and how to do it with air instead of oil The little dish of water that brings buns, dumplings and leftover rice back to life How to make leftover spring rolls, egg rolls and fried rice taste fresh again Salt and pepper shrimp without a pot of oil Why sticky glazes burn, and exactly when to brush them on Street vendor sweet potatoes and roasted chestnuts, and the safety step you must never skip Cantonese egg tarts and char siu barbecue pork in your air fryer Crispy roast pork belly with crackling that shatters like glass How to clean your air fryer and use parchment paper safely No gadgets, no fancy accessories and no sponsors. Just hot air, a little oil and the rules Chinese cooks have followed for generations. Every air fryer runs a little differently, so treat the temperatures and times as a starting point, and always check that chicken reaches 165°F and pork reaches 145°F. What do you make most in your air fryer? And if your mother or grandmother cooked something over hot coals, in a clay oven or on a fire outside, what was it and what did it smell like? Tell me in the comments. I want to hear it before it is gone.
