The $2 Spicy Pasta I Made After Everyone Left

1:47 AM. The last ticket is gone, the restaurant is empty, and the kitchen is finally quiet. I wanted Arrabbiata, but I didn’t want another pot to wash. So tonight, everything goes into one pan. Tomato, garlic, chilli, olive oil. Nothing fancy and nowhere to hide. The only question is whether the pasta can still come out properly al dente.
