Description

Never buy packaged curry sauces again! ❤️ Welcome back to Part 2 of our homemade Indian curry series. Today, we're making two more delicious Indian curry bases from scratch using simple ingredients you can find at your local grocery store. These homemade sauces are versatile, full of flavor, and perfect for turning everyday ingredients into comforting Indian meals. 🥬 **CURRY 3 — SAAG / SPINACH CURRY BASE** A beautiful, rich green curry base made with fresh spinach, aromatic spices, and simple ingredients. Perfect for paneer, chicken, chickpeas, potatoes, or tofu! **Ingredients:** - 300 g (10–11 oz) fresh spinach - 1 medium onion - 1 small tomato - 1 tbsp ginger-garlic paste - Cumin seeds - ½ tsp ground coriander - ¼ tsp turmeric - ½ tsp garam masala - Salt, to taste - Green chili (optional) - Water, as needed **Nina's Tip:** Blanching spinach briefly and cooling it quickly helps preserve its beautiful green color. Avoid cooking the blended spinach for too long, or the sauce may lose its vibrant appearance. 🥥 **CURRY 4 — FRAGRANT COCONUT CURRY BASE** A wonderfully fragrant, golden curry base made with creamy coconut milk, curry leaves, mustard seeds, and warming Indian spices. Perfect for shrimp, fish, chicken, lentils, and vegetables! **Ingredients:** - 1 small onion - 1 tomato - 1 tbsp ginger-garlic paste - 1 tsp mustard seeds - ½ tsp cumin seeds - 1 tsp ground coriander - ½ tsp turmeric - Chili, to taste - Curry leaves - 1 tbsp neutral cooking oil - 1 can (approximately 400 ml / 13–14 fl oz) unsweetened coconut milk - Salt, to taste **Nina's Tip:** Use unsweetened coconut milk, not coconut cream or sweetened coconut milk intended for desserts. Keep the heat gentle once the coconut milk is added to maintain a smooth, creamy sauce. ❤️ **MISSED PART 1?** In Part 1, we made two other delicious curry bases: 🍅 **Rich Onion-Tomato Gravy** — A silky, flavorful tomato-based curry sauce. 🥜 **Creamy Cashew Korma** — A mild, delicate curry base made wonderfully creamy with cashews. Together, these four curry bases can help you make so many different Indian meals without relying on packaged curry sauces. I hope these recipes make Indian cooking feel a little easier and more enjoyable in your own kitchen.
